I've made it by shaking it in a jar, but it's sure easier to use an electric mixer. Just whip it. It'll turn into whipped cream first, but keep on whipping. All of a sudden it will separate into butter and watery whey. If you're going to make candy or something sweet with it, don't add salt. Otherwise a little salt will help. I always added it after it was butter instead of while it was cream. By the way, the cream should be really cold; it'll turn into butter if it's warm, but it'll have a greasy texture to it that's less appetizing, at least to me.
