Often the part of the dairy you are reacting to is casein. Different dairy products have varying levels of this in it. Due to the amount of processing ice-cream goes through, the content may not be as high, or you could be eating ice-creams that have the casein removed. Some milks remove it now. I think that this is reason why you not allergy to ice cream is frozen dessert made with those dairy product and flavoring. The mixture is stirs slowing while cooling to prevent ice crystals to form.

If you're lactose intolerant, you'd have a reaction to milk but not ice cream since it has little lactose. But you have a reaction to butter which has no lactose, so I'm confused.
I wonder just how much milk is even in ice cream anymore. I let some melt in the sink last night. There was this glob of stuff left...it didn't break apart, just some of the liquid had oozed out.
