I was going to make a maple pumpkin cheesecake for Thanksgiving, but I forgot the whipping cream for the maple glaze! I was supposed to use pure maple syrup, whipping cream, and pecans. What else could I use? I have milk, sweetened condensed milk, evaporated milk...? Any ideas? What can I use in place if whipping cream?
read the recipe directions... if it calls for the whipping cream, maple syrup, and pecans to be boiled, you cannot use anything else. Go buy some cream or skip the maple glaze all together. Milk will curdle if boiled like that. What can I use in place if whipping cream?
Sorry but the fat in the whipping cream is what allows it to foam. There's really nothing else that can substitute for it. Some of the proteins will foam but it is unstable unless there is a surface tension modification. This is pretty much beyond simple kitchen ingredients. Truthfully your best bet is to just get some whipping cream rather than trying to fool around and make something else work.
