Goat's milk tends to curdle rather easily and so is difficult to separate cream the normal ways such as boiling the milk and cooling to separate the cream.
Try keeping the goat milk at room temperature and then freeze it as fast as you can. Fat (cream) tends to separate out of the frozen milk and has a hard time homogenising again. The fat/cream will appear as flakes of ';butter'; and float on top of the milk.

the milk can be set in a pan and brought to the scalding point by slow gentle heating. The milk is then set aside in a cool place, and in ten or twelve hours the cream may be removed in thick layer.
