Most cheese sauces are a cheese mixed with a Bechamel or milk sauce. Milk sauces are a pain to make, so you could try heating some chicken stock and using that to melt equal parts of cream cheese and a shredded cheddar. I would put the stock in a double boiler to help prevent burning of the cheeses as you keep the stock warm to mix the cheeses.
I always add some milk this is how I do it.
Put velveeta cheese in a microwavable bowl.Add 250ml of milk and microwave for about 2-3 minutes.
Take the cheese mixture out of the microwave and stir together.Add more milk and microwave for 2 mins.If the cheese has not melted add more milk and microwave for another 2 mins.Until it is smooth.

You can take some evaporated milk...heat it up...and once it's close to boiling...turn off the heat and add either cubed velveeta.....or some shredded cheddar cheese. You can also use half shredded cheese and half shredded cheese that is taco flavored. You can also make this real simple by heating up a jar of cheez whiz. Cheez whiz also comes in a spicy version if you want some kick to it.
