What exactly is clotted cream?

I've heard of it being served with strawberries and am curious.

Clotted cream has the texture of sour cream, but without the ';sour'; taste. It is difficult and time consuming to make - a recipe I recall started with...8 quarts of cream in a stock pot, simmer and stir constantly for six hours...or something like that.





Sometimes called Devon Cream, Devonshire Cream or (my favorite) Double Devon cream. It can be ordered at a nicer supermarket, or at a British foodstore. It's expensive: be happy if 8oz costs under $10-15. But there is nothing like it. Yummmm!What exactly is clotted cream?
clotted cream is nothing like ';sour cream';, it's a very heavy cream made from unpasteurizer cow's milk, also called ';devon cream'; (I have some in the pantry)
a thick cream made chiefly in England by slowly heating whole milk on which the cream has been allowed to rise and then skimming the cooled cream from the top -- called also Devonshire cream
It's the same thing as sour cream.





It is actually very good with strawberries.
