Any ideas on how to make whipped cream Butterscotch/toffee cream? and not runny?

I want to make a layered toffee/butterscotch cake but not sure what i could add to whipped cream to give it some flavour. The cream needs to be solid enough to hold up a couple of layers of cake! Help!

To have the best quality whipped cream, you need to make it yourself.

If you have a mixer, or if you have a whisk you can do it by hand.

1qt of Heavy Cream (chilled)

3oz of sugar

2 tsp. of Vanilla Extract

1-2 oz of warm caramel

Place the cream in a chilled mixing bowl. Using the whisk, whisk the cream until slightly thickened.

Add the sugar and vanilla and continue to whick until its at the desired consistency.

Whisk one quarter of the whipped cream into the caramel vigorusly. Then gently fold the remaining cream.

This is goin` to make the whipped cream have a velvety texture.

If this is not what you're looking for and you want a flavored whipped cream without changing the texture, then add an almond extract as well as vanilla. Only use a tsp or whatever to your liking.

OK. this question is a tough one, but I am going to give you a few answers. One of these should work for you. This is more of a trial and error to adjust the cream so work with small amounts that you can gage the results.

I have found that placing the frosting bowl in another bowl filled with Ice and water will stiffen it up but it does not always last.

2. you can add a bit of confectioner's sugar to it and whip it.

3. Personally I find that under whipping the cream helps in the final product, Why? I think it is because some of the liquid from the cream gets absorbed into the cake, and give it some time between layers.

4. Unflavored Gelatin can also be used as a stabilizer.

5. Also powdered milk

Check method 4 and 5 on this site
You can mix in about 1/2 a cup of store-bought dulce de leche into the cream and whip until stiff.
