CASHEW CREAM
1 cup raw, unsalted cashews
1/4 cup water, approximately
1/4 cup oil (optional, but it makes the cream trhicker and smoother).
2 - 3 Tbs pure maple syrup (or honey if you don't have pure maple syrup)
1 tsp vanilla
Coarsely chop the nuts in a blender or food processor. With the motor running, gradually add the water, 2 Tbs maple syrup and vanilla. Taste and add additional maple syrup, if desired. Continue processing until the mixture achieves a consistency similar to whipped cream. Add a bit more water if needed.

TOFU WHIP
Tofu Whip can be stored in the refrigerator for up to 1 week; if the mixture separates, blend it thoroughly before using. The recipe may be cut in half.
1 pound firm or extra-firm tofu, drained and cut into chunks
1/4 cup pure maple syrup
1 Tbs vanilla
1 - 2 Tbs water (optional)
In a food processor or blender, blend all of the ingredients until very creamy, adding water if needed to achieve a whipped cream consistency. Refrigerate until needed.
Variation: Instead of maple syrup, try 3 - 4 Tbs of fruit-sweetened preserves and some finely minced citrus peel. Choose the fruit and citrus flavors to complement the dessert.

SOY WHIPPED CREAM
3/4 cup soy milk
2 Tbs honey
1/2 tsp vanilla
Pinch of salt
3/4 cup soy, corn, canola or safflower oil
1/8 - 1/4 tsp lemon juice
Blend first four ingredients on high for 5 - 10 seconds. Slowly dribble in oil, blending for an additional full minute after all the oil has been added. Stop blender and fold in lemon juice (the lemon juice thickens the cream). Put into covered container and chill.

TOFU WHIPPED CREAM
2 cups tofu
4 tsp vanilla
1/2 cup honey
1/2 tsp salt
1/2 cup oil (I find that canola is the best for this cream as the flavour is not too strong)
Rinse tofu, drain and crumble. Blend all ingredients on high in blender until smooth, stopping blender 2 -3 times to stir content. Keep refrigerated

Milk powder to mix in Milk.. and u can make heavy as per desire..What can you use as a substitute for heavy cream?
I use evaporated milk. It has the same consistency as heavy cream and won't separate like most ';substitutions';.
Also, you can use unflavored yogurt sometimes.
half and half, or depending on what you are baking sour cream and cream cheese. if you are looking to cut fat or calories, use the light versions instead and of course you will have to experiment with the amounts as its not an exact substitution
Elmlea double cream it is made with vegetable oil .
Heavy Cream Substitute Recipe

1/3 cup butter or margarine, melted and cooled
