How many ounces of ice cream does a regulare ice cream scoop hold?

Many years ago, one of my high school jobs was working for an ice cream store. The traditional ';scoop'; is 2.5 ounces by weight.





Newer stores are at 3 to 4.5 ounces per scoop by weight. The scoops sold in supermarkets and cooking stores will make a loose scoop of 'regular' ice cream that weighs about 3 ounces.





The trick is that different ice creams will have different amounts of air in them to give them a lighter mouthfeel. This air is called ';overrun'; in the business. The (usually) square boxxed bargain ice creams will have as much as 30% overrun, while premium ice creams will have 10% or so, and gelatos and some super premiums will have none.





The bottom line is that less air means the same sized scoop weighs more.

define regular as there are many different sizes shapes and types each one is different. the medium range of old type scoops are aprox. 4 liquid ounces.
An average scoop - 1/2 cup, which is the serving size of most ice creams.
